1/2 cup butter, softened
1 cup brown sugar
1/4 cup honey
1/4 milk (I used rice milk)
2 tsp. vanilla extract
2 1/2 cups flour
1/2 cup wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Sugar or cinnamon sugar to sprinkle on top (optional)
1. Beat butter and sugar together in a large mixing bowl. Beat in honey, milk and extract until smooth.
2. Stir together dry ingredients and stir into batter.
3. Wrap in plastic wrap and refrigerate for several hours or overnight.
4. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper. Roll the dough 1/8 inch thick, half at a time, on a floured board. Cut into 2-3 inch squares and place on baking sheets. Sprinkle with sugar or cinnamon sugar if you would like.
5. Bake 10-15 minutes
